There is a small, specific indignity to long-haul flying: you own a very good pair of wireless headphones, the aircraft has a screen with films on it, and the two cannot talk to each other. So you spend eleven hours with a thin plastic headset that sounds like a phone call from 1994, while the good headphones sit in the seat pocket doing nothing. There is a fix, it costs less than an airport meal, and almost nobody on the aircraft knows about it.
Why the two will not connect on their own
Seatback entertainment systems are certified aviation equipment with development cycles measured in many years, and for most of that history there was no reason to build Bluetooth into them. The headphone jack is a physical socket, standardized for decades, that cannot drop a connection or pair with the wrong seat. From the airline’s point of view it has been the obviously correct engineering choice.
Some newer aircraft and premium cabins are now shipping with Bluetooth built in, and the situation is slowly improving. But "slowly" is doing a lot of work in that sentence — the fleet turns over across decades, and the odds on any given flight are still not in your favour.

Latency is fine for film, not for gaming. Modern low-latency codecs mean lip sync on a movie is not an issue. If you were planning to play something twitchy, expect a small delay.
Two headsets can often share it. Many transmitters pair two devices at once, so two people can watch the same film. This is a genuinely lovely feature that the marketing tends to bury.

Where else it earns its place

The honest caveats

And if you are flying a modern widebody in a premium cabin, check the seat before you dig the transmitter out. There is a reasonable chance the system already offers pairing, in which case you have carried it for nothing on that leg. That is fine. It weighs almost nothing.
The bottom line
You already own the good headphones. The only thing standing between them and eleven hours of decent audio is a socket that was designed before wireless existed.
